so these bars.
penelope and i found some old bananas in the fruit bowl and so we decided to make monkey bars from the pajama chef for this month's secret recipe club. i was really excited to try these because i had all of the ingredients on hand, save for the halloween candy decor on top. sarah had so many recipes that looked incredible, and i have a few more bookmarked for the future, like this caramel apple dip and these cheesy taco muffins.
speaking of which, that's a funny story. i thought it would be really fun for penelope to help decorate the tops of the bars with halloween candy. so she peeled the bananas, i mixed up the batter (all done by hand - my favorite!), and we topped the batter with candy corn and crispy m&ms. did you know that candy corn MELTS EVERYWHERE when baked?
neither did i.
it melted all into the tops of the lovely bars, leaving a horribly sunken look. i was pretty bummed about how the bars looked, however, i was really pleased with how they tasted! these bars were a really interesting combination of bananas, chocolate and cinnamon, all baked into a tasty bar. after the bars cooled and i cut them up, i replaced the sunken, melted candy corn with new candy corns for the photos. so, if you decide to make these (and i hope that you do!), then please don't bake them with candy on top. just follow the recipe and add the candy while the bars are cooling.

3 ripe bananas, mashed
3/4 C light brown sugar, packed
1/4 C canola oil
1/4 C milk
2 tsp vanilla extract
1 tsp baking soda
1 tsp ground cinnamon
1 3/4 C whole wheat flour
1 C mini chocolate chips
halloween candy, for topping, if desired
Preheat oven to 350 degrees. Grease a 9"x13" pan and set aside
Stir together bananas, sugar, oil, milk, eggs, vanilla, baking soda and cinnamon. Fold in the flour. Stir in the chocolate chips.
Pour batter into pan. Bake for 40-45 minutes. Once removed, top with halloween candy of choice. Let cool completely, cut into bars, and serve.
