Do you cook a lot on the weekdays? I find it really hard and undesirable to arrive home at 7pm, spend an hour with Penelope, and then get cracking on dinner at 8pm. Am I alone in that? Like for real, a complicated dinner just isn't going to happen.
Luckily for me, Shaun also does a lot of cooking so we share the responsibilities. Many nights, it's a tag team effort and I'm really thankful for a man who knows how and loves to cook. In my search for healthier weeknight recipes that don't taste like cardboard, I've been getting creative with my spiralizer. A couple weeks ago, I made this simple roasted chicken parm over zoodles. We divvied up the duties, Shaun prepped and roasted the chicken, while I spiralized and cooked the zucchini. The dish was low carb, low fat, very filling and very delicious. This is a new weeknight staple!
chicken parmesean zoodles
2 boneless, skinless chicken breasts
2 C tomato sauce
2 large zucchini
1 tsp olive oil
2 oz fresh mozzarella or 1/2 C shredded mozzarella cheese
2 Tbsp parmesean cheese, grated
non-stick baking spray
Preheat your oven to 400 degrees. Line a baking sheet with foil and spray with non-stick spray. Lay chicken breast on foil, and sprinkle with salt, pepper + basil. Roast in oven for 20-25 minutes or until chicken is fully cooked. Leave the oven on after cooking the chicken for later use.
Meanwhile, heat sauce in a small saucepan over low heat. Next, peel and spiralize your zucchini. I like the thinnest blade for spaghetti-like zoodles. Once the zoodles are prepped, heat the olive oil in a skillet over medium heat. Add the zoodles and sprinkle with salt and pepper. Using soft tongs, turn the zoodles frequently and cook for 2-3 minutes. Turn off heat and let sit.
Back to the chicken. On the same baking sheet, slice up your chicken, if desired (we did). Add 1/4 C tomato sauce atop each chicken breast and top with 1.5 slices of cheese, or 1/4 C of shredded cheese. Place back into the oven for 3 minutes to heat and melt the cheese. Remove from oven.
Time to plate! In a shallow bowl, or on a dish, plate up some zoodles and top with sauce. Add sliced, cheesy chicken and top with grated parmesean cheese. Enjoy immediately!
So that's a new weeknight staple that I'm loving. All the yum-ness of chicken parm, with a lot less calories!
