This week, I finally started my diet for my sister's wedding, coming up in a short few weeks. As some have pointed out to me, it's kinda late for that, however, better late than not at all is what I like to think. To kick things off, I'm doing the Dukan Diet as a way to drop pounds fast and furiously. Last year, I found a lot of success very quickly with this nutritional regimen and so I'm confident that even a few pounds prior to the wedding will help me to feel my best.
So why are we talking about cream cheese swirl brownies?
Because I made them to enjoy with our friends a couple of weeks ago and I really wanted to share them with you too. Or I'm just masochistic. Probably a little of both.
We actually never made it to enjoying the brownies together. We were occupied with chicken wings and cheese boards and the pizza and all of these adorable little children.
Side note - how are we all old enough to have children?
So I left most of them there, and took some home to try out later. Because you know, I'm old enough to have the oldest child at the party and she acted like she was twelve rather than two. So yeah, brownies were needed.
These brownies were super simple and made with items I had right on hand. I used a brownie mix for the base because, well, brownies from a mix are just good so why change it?
My favorite part of the brownies are that they are goooooey. Not like totally falling apart gooey, but nice and dense and moist and gooey. Also the cream cheese swirl topping. Because cream cheese makes everything better.
gooey cream cheese swirl brownies
*adapted from Betty Crocker
1 box brownie mix
2/3 C vegetable oil
1/4 C water
cream cheese topping:
4 oz. cream cheese, softened
3 Tbsp sugar
1/4 tsp vanilla extract
Preheat oven to 350 degrees and generously grease a 9x9" baking pan.
Prepare the brownie mix per the box instructions and set aside.
In a mixing bowl, beat together the cream cheese, egg, sugar and vanilla extract until completely combined and smooth. Set aside.
Pour 3/4 of the brownie batter into the baking pan. Spoon the cream cheese mixture on top. Dollop the remaining brownie batter atop the cream cheese. Use a knife to swirl the toppings together.
Bake for 40-45 minutes or until a toothpick comes out clean. Let cool, cut and enjoy!
