One of my goals for 2016 is to lose some weight, and I'm happy to report that so far, it's going really well. I'm trying not to obsess over the scale, but instead go by 1) how I feel and 2) how my clothes fit. Over the last two weeks, I've had a few weekend struggles, but otherwise, I've been staying true to my healthy eating plan. I couldn't go full-blown Dukan, so I'm doing a modified version of just high protein and lots of veg, but very limited carbs and sugar. I am still enjoying the daily allotment of oat bran though ;)
Though I'm trying to be pretty strict, I don't mind veering a bit when it comes to healthy grains and legumes. And so for this month's Secret Recipe Club, I tried to find something that would fit the bill. When I came across these chili spiced chickpeas from Dessert Before Dinner, I knew that it would be the one to try.
Also, football sunday = snack city. I don't feel badly about snacking on these all afternoon. They are crunchy and tasty and a great way to satisfy that snacking craving! Stephanie has a ton of recipes that I bookmarked, like this puff pastry pear salad (um, yum!) and these cute popcorn balls that I know would be a great one to go with our popcorn machine!
crunchy spiced chickpeas
*adapted from dessert before dinner
1 14 oz. can chickpeas, drained, rinsed and patted dry
1 tsp cumin
1 tsp olive oil
1 tsp paprika
3/4 tsp kosher salt
pinch garlic powder
pinch black peppe
dried or fresh parsley, for garnish
Preheat oven to 350 degrees. Toss chickpeas with olive oil and spices. Spread out in a single layer on a foil-lined baking sheet. Bake for 45 minutes to an hour, or until chickpeas are dried out and crunchy. Enjoy immediately!
