did you guys get buried by snowstorm jonas last week?
we did. like 2+ feet of snow.
we were prepared with food and libations and friends nearby. we also spent a little bit of time actually out in the snow. i love snow storms when they are happening and immediately following. and then i wish they'd just go away immediately and never come back.
aside from the impossible driving, parking, dirty snow situation, the only thing i don't mind about lingering snow is a day off from school + work.
penelope and i had one of those last monday and so we spent a little time in the kitchen baking and trying to find a healthy breakfast for the two of us to start the week off right, despite not getting out of our pajamas all day long.
Penelope and i came up with this strawberry smoothie. i told her it was like ice cream that you drink, and she was all about it. I, usually of the peanut butter/banana smoothie variety only, even loved this version. Instead of Greek yogurt, I used nonfat vanilla yogurt to keep it sweet, rather than tart. It also made a nice big batch that kept for a few days in the fridge.
strawberry vanilla smoothie
1 1/2 C strawberries, frozen or fresh, plus extra for garnish
1 C milk
1/2 C vanilla yogurt
1/4 tsp vanilla extract
Combine all ingredients in a bowl or large measuring cup. Blend well with an immersions blender.
Or, combine all ingredients in a blender and blend until smooth.
Makes 2-3 smoothies, and will keep covered in the fridge for a few days.
