you guys, this cold. it's out of control!
i hope you had a great valentine's day and are enjoying a day off from everything today. we spent the weekend away and will spend monday on the road heading home, with my persuading shaun to allow only hamilton and podcasts to dominate our audio experience.
it's no secret that i LOVE cheese. many nights, i could just eat cheese and crackers for dinner and be happy. so when i found this baked brie with brown sugar and pecans from join us, pull up a chair, i knew this would make a perfect dinner for one while shaun was out one evening. it's creamy and salty and sweet and basically everything that's wonderful about eating.
since i made this for one person, i reduced the recipe greatly from the original. but the beautiful thing about this recipe is that you can just do that. if you are making it for a crowd, feel free to use an entire wheel of brie. or you know, if you are just really hungry. it's fine.
baked brie with brown sugar + nuts
*adapted from join us, pull up a chair
1 wedge brie cheese
2 tsp brown sugar
2 Tbsp salted almonds, roughly chopped
sprinkle kosher salt
Preheat oven to 350 degrees. In a ramekin or very small oven safe baking dish, place the wedge of brie and slice off the top of the rind. Sprinkle with brown sugar and chopped almonds. Bake for 10 minutes or until the brie is melty and delicious. Enjoy with crackers or crostini.
