I'm on a constant quest to find little cheat ways to enjoy food I love while losing weight. It's like a never-ending challenge that I sort of love and obviously hate. Because why can't I just eat all the bread and all the desserts and still be thin and on the verge of bathing suit ready? Why is it 2016 and no one has figured out how to do that yet? Instead, I've been doing a little bit of the Dukan diet mixed with general low-carb eating. I'd say it's going ok. Made better and easier by this little snack you are seeing above.
In any event, I found this cloud bread. Have you tried it?
It's basically 'bread' made of eggs and cream cheese. 'Bread' it is not, but it is a nice, light, airy vehicle for consuming other non-carby things. Like dips and peanut butter and even as a little pizza perhaps? It would also make for a solid sandwich thin. Or as the bottom of a strawberry shortcake, layered with berries and whipped cream. My most favorite way to enjoy cloud bread lately, though, is with a bit of nut butter and a drizzle of local honey.
I've never been a fan of honey, really. I never understood tea with honey or honey flavored anything if I'm being honest. Of course, I always keep a grocery-store honey bear in my cabinet at all times, but I don't really use it outside of sweetening a salad dressing.
But then I found this amazing honey from Oh Honey at a local Jersey City street fair and was hooked. It's sweet and strong with a little bite at the end, and it comes in these super cute little jars. Also, using a honey comb is fun. It's currently faintly crystallized in my spice drawer and it's absolutely glorious. I drizzle a bit on top of the peanut butter just for the tiniest hit of sweetness. And I top it with flaky kosher salt to offset the sweetness. ugh it's soooo good.
Aside from the honey, which is a natural sugar, this little treat is low carb and makes the perfect post dinner snack. Or a great breakfast. It's just filling enough.

3 eggs, separated
3 Tbsp cream cheese (full-fat), at room temperature
1/4 tsp baking powder
1 Tbsp honey
dash kosher salt
for a sweetened version, add:
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
Preheat oven to 300 degrees. Line 2 baking sheets with parchment paper.
Separate egg whites and yolks into 2 mixing bowls. With a hand mixer, mix the cream cheese, honey and salt with the egg yolks until smooth (if adding vanilla and cinnamon, do so now and mix in completely). Rinse and dry hand mixer. Next, beat the egg whites and baking powder together until they form stiff peaks. Fold the egg whites into the yolk mixture. Spread into rounds on parchment-lined baking sheets. I got about 10-12 rounds with this recipe. Bake for 15 minutes or until the bottoms begin to brown and the top crackles. Let cool.
Store in an airtight container, separating the rounds with parchment paper.
I eat these with the pb and honey for my post-dinner snack. I like to broil them for 1-2 minutes to firm up a bit, then add the pb and honey so it gets all melty. yum!
