happy monday! it's another week and for me, monday always means the return to healthy eating. i'm still going strong on the fit girls guide, and so when I had to choose a recipe for this month's secret recipe club, I went with something that would still be fit girl-approved. Enter cauliflower cheesy bread from Loving Life. I've made cauliflower pizza in the past, but never cheesy bread. I have to say, this turned out even better than the pizza!
It starts with 'riced' cauliflower (I made a huge mess in my kitchen breaking down the cauliflower and getting it in and out of the food processor...shaun is used to my kitchen disasters by this point, though I'm not sure he loved stepping on random bits of cauli throughout the day...). Then, it is drained and mixed with lots of cheese, baked on high heat, sprinkled with even more cheese and devoured with tomato sauce for dipping on the side.
Kirstin has so many recipes that look incredible. She is a mom to two lovely daughters and lives in the pacific northwest. I really want to explore that part of the country. I don't get out of the east coast too often ;) Thanks to Kirstin for this great recipe!
cauliflower cheesy bread
*adapted from Loving Life
1 head cauliflower, riced (if a large cauli, rice & use half and freeze the other half for another time)
1 C mozzarella cheese, shredded, divided
1/4 C parmesean cheese, grated
1 large egg
1 garlic clove, minced
1/2 tsp salt
2 Tbsp fresh basil, chopped
tomato sauce, for dipping
Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
Rice the cauliflower in a food processor. Transfer to a mixing bowl and microwave for 2 minutes. Let cool enough to handle and drain in a sieve, pushing the water out with a paper towel.
Mix in 1/2 C mozzarella, parmesean, garlic, egg, and salt. Spread out in a thin layer onto the parchment-lined baking sheet. Bake for 12 minutes. Sprinkle the remaining mozzarella and basil on top. Return to oven for 3-5 minutes or until cheese is melted. Let cool slightly and cut into sliced with a pizza cutter. Serve with tomato sauce.
