I know I've been a bit MIA from the blog lately, but it's only because life and work have just been so incredibly busy. It always feels like this time of year just gets super crazy and I can't seem to keep up. I'm doing a lot of traveling over the next month so it was fun to make a nice treat with Penelope before I head out this week.
For this month's Secret Recipe Club, I received Fantastical Sharing, a food blog written by Sarah, a mom of 3 in Knoxville, Tennessee. Sarah had so many recipes that looked, well, fantastical. Like her funfetti cake batter dip and her buffalo cauliflower (yummm!). Ultimately, I chose Sarah's chocolate chip cookie dough brownies for this month's post. A layer of fudgy brownies, topped with chocolate chip cookie dough and baked until set. I slightly undercooked them for a gooier texture, because obviously. These were super easy to whip up, perfect for tiny kitchen helpers, and great to serve for a big group! Thanks Sarah for this awesome recipe that I'll be using again and again!
chocolate chip cookie brownies
*adapted from fantastical sharing
1 box brownie mix (I used Betty Crocker Supreme) + ingredients on box (oil & eggs)
1 package chocolate chip cookie dough mix (I used Better Crocker) + ingredients on box (butter & water)
butter for greasing the pan
Preheat over to 350 degrees. Grease a 13 x 9" pan very well. Mix brownies with oil and eggs until just combined. In a separate bowl, mix cookie dough mix with softened butter and water. Spread the brownie mixture evenly into the prepared pan. Dollop the cookie dough atop the brownies. Spread the cookie dough around as best you can. Bake for 30-35 minutes or until just set. Let cool and serve. (!!)
