We spent the week of July 4th exploring California. While we typically spend the first week of July in Aruba, this year we decided to change it up a bit and explore more of the US. There were so many things I loved about California, and one of them was the FOOD. We ate really well. Two of my favorite spots, in case you are interested, were Haute Cakes Cafe in Newport Beach and Nick's in Laguna Beach. I was on a real fancy oatmeal kick for most of our breakfasts, and so once we arrived home, I knew I wanted to recreate some of the dishes I'd had on the west coast. When I came across Rafeeda's recipe for porridge with honey and dates while exploring her blog, The Big Sweet Tooth for this month's Secret Recipe Club, I knew I had found a great reason to get my oat on yet again.
Rafeeda has 2 daughters and is a full-time working Mom. i can relate to that! I can hardly keep it together with one little girl, I can only imagine having 2 plus working full time. She also cooks with such interesting ingredients and flavors, and takes absolutely gorgeous photos. I hope I did her justice in this post :)
I really loved this recipe. I whipped it up fairly quickly, which is also a win for us working Moms. I used oat bran for something light and absorbent. I also added to the list of toppings from Rafeeda's original recipe. While hers called for honey and dates (yasss!), I also added a healthy dose of 2% plain Greek yogurt, 1/2 banana and some chia seeds for some extra texture and crunch. The honey and dates added such a lovely, comforting sweetness. I think I found my new staple weekend breakfast!
oat porridge with honey & dates
*adapted from the big sweet tooth
1/4 C oat bran
1 C milk
dash vanilla extract
1/4 C 2% plain Greek yogurt (I use Fage)
1 Tbsp honey (I used local creamed honey. oh.my.word.)
1 date, pitted & chopped
1/2 tsp chia seeds
In a small saucepan over medium heat, mix together the oat bran, milk, cinnamon, salt and vanilla. Bring to a gentle boil. Reduce heat and stir for another 1-2 minutes until the oat bran has thickened slightly. Remove from heat and pour into a bowl. Top with Greek yogurt, honey, banana, chopped dates and chia seeds. Devour immediately, preferably with a rich, hot coffee on the side.
