It's been quite a while since I've posted. The summer has been busy. Lots of travel, lots of on-the-go. Work has been busy for the last few months. Like, really busy. P has gone from school to camp and back to school again. And I just haven't had it in me to spend extra time behind the computer blogging. I miss journaling and I miss all of you who read, comment, and enjoy checking in on what's happening with me. I'm actually not completely sure where the blog will go in the next few months...I may pick up where I left off. I may change direction. I may say farewell for a bit longer. We will see and as soon as I have answers, I will share them with you :)
Meanwhile, I can't believe a whole month has gone by since I've posted. Here we are another month later and time for another secret recipe club post! This month, I received Table for Seven, a beautiful blog written by Erin, a mother of six who cooks, bakes and shares all the recipes from her kitchen. Erin's photos are simply beautiful and I had a lot of her recipes on my list to try this month, including her peanut butter fruit dip and mini bacon meatloaves (heart eyes!).
I decided on her honey garlic meatballs because they just looked sweet and savory and totally delicious. I made these for Shaun and I to snack on over the long weekend, and I think they'd make a great party food for any gathering! Thanks Erin for this delicious recipe!
Honey Garlic Meatballs
*Adapted from Table for Seven
18-24 pre-cooked or cooked-then-frozen meatballs
2 Tbsp brown sugar
1/2 C ketchup
1/4 C honey
2 Tbsp low-sodium soy sauce
1 tsp minced garlic
optional: sesame seeds for garnish
In a saucepan, combine the brown sugar, ketchup, honey, soy sauce and garlic over medium heat. Stir frequently until the sugar dissolves and the mixture begins to bubble. Add the meatballs and coat with the sauce. Cook on low heat until the meatballs are heated through and the sauce has thickened. Plate and garnish with sesame seeds. Serve immediately.
