The easiest weeknight rotisserie chicken quesadillas that are turned way up in flavor with the addition of all those fixins!
One of the things I’ve realized since becoming a Mom of two is that weeknight dinners have to be simple and quick to prepare, but also delicious. We eat after the kids go to bed, which is controversial to some. Call me crazy, but dinner is the one moment of the day that Shaun and I can eat a warm meal in peace together without jumping up every two seconds to get something else for the kids while our dinner wilts away to a sad state of coldness.
So, we eat pretty late at night. Like usually around 8:30, or sometimes even closer to 9 depending on how the bedtime routines go :) As you might imagine, it doesn’t leave a lot of time for involved meals.
Our most recent find making our lives so.much.easier. is the rotisserie chicken. Yes, we’ve had them so many times in the past, but only recently discovered their true potential. We fill corn tortillas for dinner, make chicken salad for lunch, add chicken shreds to soup for the kids. Is there anything a rotisserie chicken can’t do? We buy two chickens on Sunday, Shaun breaks them down and BOOM - we’ve got the base for so many easy, delicious meals for the week ahead.
Back to the quesadillas. While the chicken and cheese sandwiched between two corn tortillas are so good on their own, for me, it’s allll about these fixins. We always keep store-bought pico on hand, as well as either individual cups of guac or hope the stars align for some ripe avocados. I also made a jar of pickled onions which make ALL the difference. They are so good and make a simple meal feel so special. I used this super easy pickled onions recipe, that’s now a weekly staple.
This isn’t really a recipe, but I”ll list it all out for an easy view:
Simple Chicken Quesadillas with Fixins
4 corn tortillas
1 C shredded rotisserie chicken
1/2 shredded cheese of your choice
1/4 tsp cumin
1/4 tsp chili powder
butter or spray for pan
1 avocado or 2 individual cups of guac
1/2 C pico de gallo
1/4 C sour cream
Make your quesadillas! Mix the chicken with spices and a little bit of cheese in a bowl and microwave until warm. Meanwhile, heat up pan and add one tortilla. Spread chicken on tortilla and top with extra cheese. Cover with second tortilla. Once the tortillas start to stick to the filling, it’s time to flip. Cook until cheese is melted. Serve with all those fixins!
