Apple Oatmeal Mini Muffins

These easy, healthy mini muffins are a perfect fall snack for adults and kids! Made with grated apples and oatmeal, they are flourless and only slightly sweetened with maple syrup. My kids (and I!) love them!

I’ve clearly been on a mini muffin kick. Between all the pumpkin and all the apples, I’ve been trying to think of new ways to enjoy all of the fall flavors. Oh, and trying to find some healthy snacks for my kids and myself.

You know what’s not healthy? 2 full huge bowls of Halloween candy that we have sitting atop our china cabinet, taunting me every evening. I am such a trick or treat pusher - we have to find the best spots to trick or treat, and my kids must get tons and tons of candy (it’s the thrill of the get after all!) - but I don’t love actually having the candy in my house.

Also not healthy? The fact that I worked like crazy last week and snacked on whatever I could get my hands on. And not even good unhealthy snacks. I’m talking chocolate teddy grahams people. It was bad. Really, really bad.

That’s why I love all the things that mini muffins have to offer. They are a small snack that’s easily poppable. I take two in a little container as my afternoon snack at work. My kids love them. P, who’s 5, asks for them as soon as she wakes up and I’m happy for her to start the day with something healthy (instead of the sugarfied yogurt she talked us into buying). H, who is 16 months, also digs them. I quarter them up, or just let him go to town on the whole thing.

These muffins are simple and delicious. They’re inspired by The Clean Eating Couple. Instead of blending these up, I simply mixed them by hand (another reason why I heart muffins so much), and I edited some of the ingredients. I hope you enjoy!

Apple Oatmeal Muffins

  • 2 C old fashioned oats

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 1/2 tsp cinnamon

  • 1 tsp ginger

  • 1/4 tsp nutmeg

  • 1/8 tsp cloves

  • 2 eggs

  • 1/2 C maple syrup, at room temperature (not cold!)

  • 1/3 C coconut oil, melted and cooled

  • 1/3 C unsweetened almond milk

  • 2 baking apples, peeled and grated

Instructions:

  • Preheat oven to 350 degrees.

  • Grease a mini muffin tin with baking spray.

  • In a blender, or with a coffee grinder (that's what I used!), pulse the oats until they are like flour.

  • In a mixing bowl, whisk together the oat flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and cloves.

  • In a separate bowl, combine the eggs, cooled oil, maple syrup and almond milk.

  • Pour the wet ingredients into the dry.

  • After grating the apples, squeeze out some of the moisture with a paper towel, as the apples will be very wet.

  • Fold the apples into the mixture.

  • Scoop into the mini muffin tin. I used a scant small cookie scoop for each muffin.

  • Bake for 12-14 minutes or until firm and a toothpick comes out clean (a few crumbs are ok, as long as it doesn't come out like wet batter).

  • Let cool and enjoy!

  • These can be stored at room temp for 2-3 days, in the refrigerator for a week or in the freezer for up to 3 months (or until freezer burnt).

Chocolate Chip Rice Krispies Treats for Halloween

These Rice Krispies treats are softened up with extra marshmallows and butter, and dyed orange for Halloween! A healthy helping of mini chocolate chips on top turns the whole treat up a notch!

We’re fortunate to live in a building where we have an amazing community. There are so many young families and we have many gatherings throughout the year, be it for the holidays, Halloween or even a summer movie night in the park across the street.

This past weekend, we had a kids Halloween potluck party and I had grand plans of making Pinterest worthy Halloween treats. But, I have serious working mom problems. I spent late nights at the office working on a majorly huge pitch AND for extra fun, I spent the week recovering from a stomach virus. I didn’t even have time to search for said cute recipe, let alone actually, you know, make it.

So I decided on a classic to which I classically haven’t paid much attention: the Rice Krispies treat. So simple, so delicious, and my favorite part, all of the ingredients can be found at the local drug store so no special grocery store trip needed. I did have orange food coloring and mini chocolate chips, so I can’t guarantee a drug store would have those. 

I upped the ante with double the amount of marshmallow and butter to one box of cereal. This made for extra soft, marshmallowy, buttery treats and left me wondering why I’d never thought to do it before.

Chocolate Chip Rice Krispies Treats

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients (24 bars)

  • 6 C (1 box) Rice Krispies
  • 2 16oz. bags marshmallows (minis or regular size)
  • 8 Tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • Orange food coloring
  • 1/2 C mini chocolate chips
  • Baking spray to coat the pan

Instructions

Grease a 9x13” pan with baking spray and line with parchment or foil, leaving overhang as ‘handles’ on both ends. Grease the parchment as well (but not the handle part!).

In a large saucepan or stock pot, melt the butter and both bags of marshmallows over medium heat, stirring frequently.

While this melts, pour the cereal into a large mixing bowl.

When completely melted, stir in the vanilla and salt, stirring continuously until combined. Add the food coloring to your liking and mix completely. Note that the color will fade slightly once you add the marshmallow mixture to the cereal, so you may want to add more than you think you need.

Pour the buttery marshmallow mix into the bowl with cereal and gently fold together until completely coated.

Pour and press the mixture into the prepared pan. I coated the back of a wooden spoon with baking spray and used this to press and flatten the mixture.

Let stand until slightly cooled and then press the chocolate chips into the top.

Let cool completely and cut into squares.

Maple Cinnamon Baked Apples

Delicious, warm, apples baked with maple and cinnamon. These apples will make your home smell AMAZING!

A couple of weeks ago, we went apple picking. It was nothing short of one million degrees outside. I tried to put on my best, if not sweaty, face and settle in for some fun.

But have you ever realized how INSANE apple picking is? We each paid a fee to enter the orchards and harvest someone else’s crops, all the while sliding in mud and being attacked by bees. We carted our apple bags back down the hill to then pay $35 for 15 pounds of apples.

When we arrived home, it took two enormous bowls to hold all of the apples, for which I had so many grand plans. Apple pies! Apple bread that I could distribute to neighbors, co-workers and our building concierge! I envisioned them wrapped in brown paper and tied with bakers twine.

Do you know how many loaves of apple bread I made? Or the number of apple pies?

Zero. I made zero.

Why? Because I have two kids and a job and a blog and an extra insta account for good measure. And the though of peeling and chopping 100 apples sort of lost its luster once we arrived home.

Shaun and Penelope have been eating apples like it’s their job to keep them from going bad. It’s been a valiant effort.


Instead, I made baked apples, inspired by The Minimalist Baker. Yes there’s still peeling and slicing involved, but it basically ends there. No dough to roll out or bread to mix up. Just apple slices tossed with some yummy things and baked. In under an hour, I had the most amazing, soft, sweet (but not too sweet!) apples. I topped my overnight oats with them! I ate them right out of the glass baking dish! I enjoyed them for dessert topped with some whipped cream. Basically any way you slice it, these are awesome.

Maple Cinnamon Baked Apples

Prep Time: 15 minutes

Cook Time: 45 minutes

Ingredients (4-6)

  • 4-6 baking apples
  • 1/4 C maple syrup
  • 3/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1 Tbsp cornstarch
  • juice of 1/2 lemon

Instructions

Preheat oven to 350 degrees.

Grease a 9x13" baking dish.

Peel and slice the apples and place evenly in baking dish.

Top with maple syrup, spices, lemon juice and cornstarch.

Toss gently with a big spoon or silicon spatula.

Cover lightly with foil and bake for 45 minutes or until apples are fork tender.
