if you are looking for an easy yet impressive (and totally delicious) cake for the holiday, i highly recommend this one!
cranberry apple cake
*adapted from ina garten
12 oz fresh cranberries, washed
1 large granny smith apple, peeled, cored & diced
1/2 C light brown sugar
1/4 C orange juice
1 1/8 tsp ground cinnamon, divided
2 extra large eggs, at room temp
1 C + 1 Tbsp granulated sugar
1 stick unsalted butter, melted & cooled
1 tsp pure vanilla extract
1/4 C sour cream
1 C all-purpose flour
1/4 tsp kosher salt
Preheat oven to 325 degrees.
In a mixing bowl, combine the cranberries, apple, brown sugar, orange juice, and 1 tsp cinnamon. Mix together and set aside.
In the bowl of an electric mixer fitted with the paddle attachment, or with a hand mixer, beat the eggs on medium speed for 2 minutes. Add 1 C granulated sugar, butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.
Pour the fruit mixture into a glass or ceramic pie plate. Pour the batter evenly on top of the fruit, ensuring it's all covered completely. In a small bowl, combine the remaining 1 Tbsp granulated sugar and 1/8 tsp cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, until a toothpick inserted in the middle of the cake comes out clean and the fruit is bubbling around the edges. Serve with whipped cream, if desired.
